Supplier Spotlight: Yew Tree Farm
So far in our Supplier Spotlight blogs, we’ve introduced our cheese supplier, The Courtyard Dairy and our wine supplier, The Wright Wine Company. For our latest instalment, we went up to Cumbria to visit one of our relatively new suppliers, Yew Tree Farm.
Our Executive Head Chef, Simon Bolsover, is always looking at inventive ways of using locally sourced ingredients and has recently begun working with Yew Tree Farm in Coniston, Cumbria to supply is with hogget.
Jon Watson, tenant farmer of Yew Tree Farm, is a traditional farmer rearing Herdwick sheep and belted Galloway cattle. The livestock lives naturally on the fells and pastures which provides a wholesome lifestyle and diet. This ensures that the produce is rich, tender and gives a depth of flavour.
In addition, this low impact approach has been shown to have a small carbon footprint and actually help to protect land that locks up carbon and supports a wide range of important plants and wildlife. Jon personally selects, transports, butchers and packages all of his meat to ensure maximum traceability.
So, what’s on our menu?
The hogget loin supplied by Yew Tree Farm can be found on the menu in Macleod’s. The hogget loin is served with buttermilk fried sweetbreads & burnt aubergine. It has been perfectly paired with a glass of Marques de Murrieta Rioja from our wine supplier, The Wright Wine Company.
