Meet the Team | Fernando Vasconcelos

We are delighted to introduce you to Fernando Vasconcelos, our Junior Sous Chef, (pictured on the right hand side). We took 5 minutes out with Fernando, to find out a little more about him and his Coniston career, being one of the first members of the team to undertake an Apprenticeship.

What is your job role?

Junior Sous Chef at The Coniston Hotel and joker in the kitchen – our team morale is amazing!

How long have you worked at The Coniston?

12 years – feels like only yesterday! It’s been an honour to develop and grow with a business that has changed significantly over the years.

Typical day in your job role?

First things first, coffee! I then start to prep and construct the main course dishes for The View, our flagship restaurant and Macleod's Bar & Lounge, our all day dining outlet. We very much work as one team, so if other areas need assistance, I’ll jump in and help.

What was your experience like completing an apprenticeship at The Coniston?

Fantastic. I received a lot of guidance, support and mentoring throughout my qualification from everyone – the team, HR and Directors. Progression is so important to the business and they really encourage this.

What advice would you give others looking at embarking on a chef apprenticeship?

Go for it! If you like a fast paced environment, a challenge and being tested to your limits, this is the role for you. No two days are the same and I love that!

What do you love most about working at The Coniston?

The care and attention we put into our dishes is second to none. We have an organised and clean workspace to work as smoothly as possible and the banter we have in the team is great.

What is your favourite dish on the menu?

For me, I love a classic dish so my favourite would have to be fish and chips!
